These are heavy, well balanced, forged knives, blades made of rust-resistant, reasonably good quality high-carbon stainless steel. On the box it says that they are 'fusion forged' but I have no idea what that means. The specialized knives come with a black polymer, 'non slip' soft grip. The stake knives have stainless steel handles.

The Santoku and Partoku knives come with oval indents that are meant to allow food to release from the blade. All knives feature forged bolsters for better balance and to keep fingers from running up on the blade.

You get the following knives:

- 7" Santoku (slice, dice, chop and mince)
- 8" Slicer
- 3.5" Parer
- 3" Peeler

While clearly not 'high end', and no one should expect 'chef' knives at this price, they appear to be durable. The block is solid, heavy wood and there is also a sharpener. And this set comes with some of the sharpest steak knives I've seen. The only issue I have but it's no big deal, really, is that the handles tend to be a little small.

I was in dire need of a new knife set but I didn't want to spend a ton on one either. So I was shopping around & came across this 16 piece set from Chicago Cutlery. I red all the reviews and decided on this one simply because it had all I needed & I knew it would fit under my cabinets. After I used the knives for a few times I was in love. THey slice like razoe blades through everything we cut up. I did read that these knives would rust so I tried to remeber not to leave them laying in the kitchen sink. I would wash them & dry them right off but 1 night I forgot & left 2 in the sink with no water. Even though there was no water it was still damp & the knives did have a small trace of rust on the edges. It's fixable but I learned my lesson. If you want them to last then take care of them. They are not rust proof so don't be lazy like I was by forgetting to dry them off properly. Forschner is by far the best knife for the money. They always arrive razor sharp, and have the ability to hold an edge far longer than much more expensive knives. I purchased one for all of my line cooks as they are very durable and can be used to perform almost any task in a professional kitchen.

The "sports mom" comment that it "felt cheap" was probably due to its light weight and composite plastic handle. To an untrained eye, it could be confused for a "cheap" knife, but after de-boning a chicken, slicing through a butternut squash, it still glides through tomatoes like butter and can perform the most surgical of cuts. The composite plastic handle has an amazing grip even when your hands are covered in duck fat, it won't slip.

I own knives that can run up into the $1200 range, but still prefer this little powerhouse for everyday use. If you only own one sharp knife in your entire kitchen, this should be the one. Suddenly, I feel like cooking again. Chopping onions, dicing carrots, making perfect juliennes with red peppers and mincing the garlic fine for my famous (!) vegetable medley is...effortless. All because of these knives. Ooh they are sharp! So be careful or you may end cutting yourself!

I love the fact that the knives are sharp right out the box. Many people swear by their forged knife blades but that makes the knives heavier. I have another set from Pinzon (Amazon's brand) and yet another from Cuisinart that I barely use as they are heavier and not as sharp as these knives. I think stamped blades are great as they are lighter and thinner like these Ginsu knives. If you cut vegetables more than meat then you need knives like these. For meat you need heavier blades with more balance and "brute force". For slicing a tomato so fine that you can see through it you need a Ginsu. With a Ginsu in your hand you'll end up sculpting roses from your radishes!

Update 11/5/08: I have been using these knives for 1.5 years now. They're still doing fine and are still very sharp. I regularly throw them in the dishwasher and they have not shown any signs of rusting. I love these knives and miss them if I am cooking somewhere else. I use the steak knives as everyday knives for slicing veggies and they work very well. If I ever purchase another set I will go with Ginsu again.

Update: 8/27/2013: Still using these knives after 6 years. Still going strong and are pretty sharp. Although we took to using some as box cutters and for other reasons and lost a few of the steak knives.
